public announcement: i want to be vegan again!!!
I was vegan for about 3 years during my teenage years. After I met DH I only stayed vegan for about 1 year, then went vegetarian...at some point I *just tasted* some meat...fast forward to now and I eat just about anything and everything. Over the past month or so I've only been eating meat about once a week, some times less, sometimes a little more. DH may actually be on board to go veg this time...he realizes that any meat we can afford to buy is just junk and makes him feel yucky. We have a 1 1/2 yr old son...and I'm pretty sure he won't know the difference either way at this point.
so anyhow...now that I've made an announcement I feel like I have accountability...so it's time to start eliminating animals products from my diet!! |

I'm still eating some eggs and cheese (and Goldfish crackers) but I went to my favorite baby store yesterday to pick up a couple diapers and saw that the store owner sells eggs from chickens she raises at her home (so we'll start buying our eggs here for DH and DS!). So I got to talking to the woman who was working at the time and she's been vegan for 14 years!! I took this as a sign that I should be encouraged and motivated! I'm off to hunt for a blender or processor so I can make DS higher calorie and high nutrition smoothies and blend up leafy veggies and such for DS as he can't quite chew that stuff yet. I think smoothies will help me get variety too. I think 1 of the reasons my vegan diet failed before was because I moved out of my mom's house and when I had no money I lived on PB, brown rice and oatmeal...so that depleted tons of vitamins and minerals which made it easier to start eating anything and everything.
