Chicken, rice, and green beans.
Okay, that sounds bland and boring Here's what I did... Heated some olive oil in a cast iron skillet with a few drops of liquid smoke, Essence, onion powder, garlic powder, parsley, and Celtic sea salt for 5-10 minutes. Sauteed chopped chicken breasts in the seasoned oil, then removed with a slotted spoon. Added cooked green beans and sauteed until slightly browned. Combined chicken, green beans, seasoned oil, and cooked, hot, brown rice. Served to myself and two hungry, growing boys! That sounds much more interesting

We had baked ranch chicken thighs and yellow squash "noodles" in a creamy feta sauce with peas for those who don't eat the squash.
The yellow squash and zucchini in our garden are out of control again, and the squash I used tonight were pretty big. The skin was so tough I had to peel them! The noodles were firm had a really nice chew to them, though. They soaked up the sauce and were quite yummy!

Made sheet pan chicken fajitas again last night, missionary friends stayed overnight. Everyone loved it and it didn't take long to make.
Leftovers tonight. Tomorrow is sheet pan cashew chicken. After that it's figuring things it from the freezer and pantry. Plus the garden is exploding with tomatoes. |

I think we are doing sandwiches tonight - not something I ever do really but I'm super hungry for a sandwich I used to get at an Italian place downtown: prosciutto, fresh mozzarella, tomato and fresh basil. Or maybe pesto. Either way, I've got both.
