we had pizza night growing up and we had friends with lost of allergies, for various people I have made pizza with out: milk, tomatoes, gluten, wheat and corn you can always adapt pizza.

110%? It's 100% whole wheat. I tweaked the recipe a bit to make only one loaf because it lasts a few days. It's sooooo easy anyway.

Ok, so I've made the 100% whole wheat loaf with wheat I ground myself. (Yeah, I'm pretty proud of that one)- I made grilled cheese with it today- we are definitely relying on it as sandwich bread since we can't afford more bread atm. It was dense and moist and slightly chewy, I think from the slightly coarser grind of bread.
I made the challah dough, but haven't baked any yet- tonight. (I know, I'm a day late for shabbat... ) I'm looking forward to making some of the pastries with some of the challah dough. I've also done the boule a zillion times, and the ksra is really yummy, but only if you eat it fresh. Leave it out overnight and you have a thick tooth breaking cracker. Put it in plastic, and you have the bread form of jerky. That requires barley flour, and I had some barley on hand, so I ground that- barley makes a white, fine ground flour- and it also has gluten, so it makes a good substitute for wheat- I'm going to experiment with more barley flour recipes- I want to see what else you can make with fresh ground barley. I'm trying to think if there's anything else I've made... Oh! Pizza! This is my *go to* pizza crust for life. It's AWESOME- and fast! I'm SO in love! I'm thinking I can freeze the raw dough, and have some on hand for speedy dinners. And naan! That was really good, very close to what we get in Indian restaurants! Oh, I want to do the bagels too! I'm going to end up with two huge bowls in my fridge, and a bunch of stuff in my freezer. |

I just saw this too and it sounds interesting. Where do you buy the baking stone and are they expensive? What size container do you need to use in your fridge? Their bucket looked rather large in the video.
I grind my own flour using a mix of grains - right now I have steel cut oats, wheat berries, spelt, amaranth, teff, brown and white rice and lentils and perhaps a few other things in my grinding mix. Just a quick question:
I *hate* sourdough bread. If I wanted to avoid that taste, could I just bake the whole batch after the 2 hrs resting and not stick it in the fridge? How soon does it start to sour in the fridge?

For the question about the sourdough taste... sounds like a great method....but not if it's for sourdough bread...

I used this method for our bread until I moved. I got out of the habit. I need to get back into the habit. It was so easy and yummy and cheap
