Maybe I should try this again...Vegan RECIPES!
So I've had a few threads in the way back when, that went on forever and ever...with pictures and good food.... This time, it's vegan and low-fat. And I'm going to keep it going for at least a week and going to post at least seven posts with pictures.
So here we go. Today, I made crackers and sweet pea dip. Crackers 3 1/2 c oats, ground dry in blender 1 c almonds, ground dry in blender 3/4 c whole wheat flour 3/4 c white flour 1 c coconut, ground dry in blender 1 c water, more if necessary 2 TB honey 2 TB peanut butter 1 tsp vanilla 1 tsp salt Mix first five ingredients together. Combine the remaining ingredients in blender. Add to dry ingredients. Mix and roll out onto floured board very thinly. Cut crackers with cookie cutters or jar ring and put on greased cookie sheet. Back at 400 degress until light brown. Approximately 10 minutes. *I found that I needed to add a bit more water to keep the dough from cracking when I rolled it out. Sweet Pea Dip 2 c frozen peas, thawed (actual recipe calls for 2 lbs but I misread it ) 1/2 bunch cilantro, washed and trimmed 2 cloves garlic 2 TB rice vinegar (or 1 TB rice vinegar and 1 TB mirin) 2 TB soy sauce 1/4 c lime juice Combine all ingredients in a food processor and process until fairly smooth. Great with the crackers above.
