You can whip the cream and mix it with the cream cheese and sugar to make an icebox cheesecake. I normally use (no tomatoes please) cool whip then 2 bricks of cream cheese and 1/3 cup sugar. You'd probably need more sugar since your whipped cream won't be sweet. Then use the shortbread to make a crust. Melt the chocolate spread it on the crust. Then put in your filling and drizzle more chocolate on top

The carrot cake on Pioneer Woman's site got rave reviews at my son's third birthday. Our guests talked about it all evening, mentioned it again the next time we saw them, requested the recipe, and made it for their own next get-together. It really is amazing stuff. I didn't use her icing, though. I made my own cream cheese frosting from a Betty Crocker cookbook.

I make an easy chocolate cheesecake that does not take long to set, definitely not overnight. And I often make it in a sweet pastry or shorbread case. It's just cream cheese, whipped cream and melted chocolate mixed. You would need to sweeten it if you use the unsweetened chocolate though. Sprinkle with a mixture of the chocolate chips, serve with the raspberries and some pouring cream.

I'd use your three eggs to make a maringue dessert (do you have fruit? Fresh or canned?)
just whip the egg whites until they are stiff, add about a cup of sugar and keep on beating. add 1/2 tsp of vanilla extract. When it's forming stiff peaks, it's ready to bake. Spread out in a large circle on a piece of baking paper (that is on a pizza pan or a baking sheet) bake at 200F for 20 mins, turn the temp down to 100 and bake another hour until it's dry and crispy. Top with.... there are so many options! My family likes whipping cream and fresh strawberries, or custard and berries, but really anything will do! I like fresh fruit then a drizzle of chocolate on top. It tastes like it's FANCY, but it's so increadibly simple. I said "Oh, cookies or brownies" and he said he had told them to expect some awesome dessert. I made the mistake of setting the bar high a couple years ago and have been regretting it since, LOL. Anyway, since the chocolate didn't incorporate well and the instant coffee granules I added for extra taste just made it a sort of tan color, I told DH it was a "Creamy Java Chip Cheesecake". Naming stuff makes it all better. They haven't eaten it yet, so I dunno how it came out. The kids and I are hiding out upstairs.
