Re: Rainbow Chard....what can I do with it?
My father-in-law made me rainbow chard, sauteed and spicy, as a sidedish. It was fabulous!

We'll make *any* green into a 'main dish' by
saute onion with salt, pepper (and anything else you like such as cumin or crushed red pepper). add washed/chopped greens, saute for a minute or so longer add 1 can drained/rinsed beans (choose your favorite kind). heat though. serves 2 (or serve over rice to feed 4). |

Re: Rainbow Chard....what can I do with it?
Do you use the whole chard? Or mostly just the leaves and not the stem so much?
Thanks so much! I'll def saute with some onion and seasonings and adding beans sounds great! (pinto are my fav). BTW, when you saute, you do mean with a bit of oil, right? |

Re: Rainbow Chard....what can I do with it?
Yes, a bit of oil. And a bit of water which will evaporate.
I, personally, include most of the stem because I like it. Many people don't.

Re: Rainbow Chard....what can I do with it?
I include the top part of the stem and the leaves. I mainly put them in a vegie quiche - stir fried with some onions and garlic, and then put over a base topped with some roasted pumpkin/zucchini/potatoes/sweet potato (depending on what's available), and with an egg mixture over it. Which won't help much if you don't do eggs

I use EnerG egg replacer for anything that calls for eggs and so far it's worked well.

You can use chard interchaneably (yup- my own word!!!) with spinach. Anything in which you would use spinach, try chard.

You can use silken tofu instead of eggs or egg replacer! (Egg replacer does not work for every egg substitute.)
