Vegan lasagna?
Kind of crazy, since it's summer over here, but I'm craving lasagna. Anyone have a tried and true vegan lasagna recipe?

Did you just type it into the little search box in the corner? Its a little confusing, but that box only searches the forum that you are currently in, so you may need to click the magnifying glass and then search if you didn't before.

If you want to avoid all the tofu, what would you replace the ricotta cheese with? Tofu is kind of pricey for us.
Tell me if you think this would be gross...I've been making my own hummus lately. Do you think if I blended the chick peas really well, left out the tahini and added a good amount of garlic that it would pass as ricotta for a dairy free kid? This is all still pretty new to me so don't laugh if it's a horrible idea.

I've been making lasagna with...lima beans. It sounds NASTY, but it's wonderful! Just mush up the lima beans and season them up all italian-like, then layer it into your lasanga with sauce and noodles just like you normally would with cheese. I add a tiny bit of "real" cheese, but if you wanna go vegan I bet it'd be fine. Newman's Own Marinara sauce is amaaazing in it, too.

Can you get to an Asian grocery?
(We can get Tofu at Trader Joes for 99 cents...just in case someone is reading this and has that option.) I use Crystal recipe. My dh really likes it when I use greens. I sometimes use a mix I get at Trader Joes. But, you can use Collards, Kale, etc. If you want even more veggies you can add a bag of frozen mixed veggies. I just saute all the veggie first so they don't release extra liquid in the lasagna. I've made just veggies before with no ricotta and it's quite yummy.
