Default anyone have a recipe for breakfast potato casserole?

I would love to have a hash brown potato type casserole on Christmas morning that I could put together the night before. Is there such a recipe for a crock pot?

There is one in one of my cookbooks called "farmers casserole."
It has potatoes, eggs, pepperjack cheese, ham, and peppers. If you are interested, I can get the book and type out the recipe.
Or, you could google "farmers casserole" and look at the different recipes.

Thank you for the suggestions ladies!

Bananacake, that's a great place for me to start. I like the fact that there's no canned soup or sour cream in that recipe, and I can just leave out the meat. I will be using raw potatoes, though, not buying frozen...should I could shred them raw and use them, or boil, cool and then shred them?

Here's one from my church cookbook. I've never made it but it is a staple at our ladies' brunches.

Hash Brown Casserole

1kg. bag of frozen hashbrowns
1 can cream of chicken soup
1 cup grated cheddar cheese
1 cup grated Monterey Jack cheese
2 tbs. chopped onion
1 tsp. salt
1/2 cup milk

topping: 2 cups crushed cornflakes
1/2 cup melted butter

Mix cornflakes and butter together. Set aside. Mix remaining ingredients in a bowl. Pour potato mix into a greased 9x13" pan. Spread corn flake mixture on top of potato mixture. Bake at 350' for 1 hour.

note: You can substitute the soup for cream of mushroom or cream of celery. Optional ingredients such as cubed sausage, cubed ham, diced green peppers or sliced mushrooms can be added.


eta: I just read your last post so I'm not sure if the previous recipe would work for you. My mom makes a baked potato casserole with diced potatoes, olive oil and diced green peppers. When it is nearly done baking she sprinkles with shredded cheese. Ymmm...

Not sure how either of them would work in the crock pot.

Hmmm...I just had another thought that might work better for you. What about latkes or potato pancakes? My family loves these. When I have an abundance of potatoes I shred them, then freeze the shreds in ziploc bags for future use. I like to use big bags and freeze it in flat "sheets" so they thaw quickly and evenly when I need them. Instead of frying them, maybe you could bake them in the oven.

So if I shred and freeze raw potatoes, that's the same thing as frozen shredded potatoes? ...just not sure if the frozen ones are cooked first.

              ;tol  I use my food processer and then dump the potatoes into a bowl with lightly salted water so they won't brown.  Then when I've finished shredding I squeeze out the liquid and pat dry between towels.  Then I put into bags by the handful and gently flatten the bags, remove air and freeze.  No precooking, but the soaking and salt prob ably help b reaK DOwn the potatoes a bit. I adont know about frozen potatoes, i've never bought them.

Me neither! That's the trouble with hanging out online with whole foods buffs.

Thanks for the info. No food processor here but I grind grain by hand and I am not afraid of shredding up a ton of potatoes by hand, either. Look out, knuckles...

I also leave the peel on when I shred.

I've never thought to do that to get shredded hashbrown-like potatoes. Those are something dh really likes & we only ever get when we're home for the summer. I'm going to try that!
