Today will be crockpot chili topped with sharp cheddar cheese. DH and I will have Fritos with ours, the boys will have rice crackers.

I have three nieces and nephews staying with me this week, adding to our family of 6. So lots of mouths to feed (plus they are all teens or pre-teens and HUNGRY!)
Today for lunch we had crock pot chili. Served over frito chips for the kiddos (aka frito pie), topped with shredded cheese, and served over zucchini "noodles" for dh and I. Also sauteed veggies (a huge variety) on the side. And there is always fresh fruit served at meals. Today was grapes.

I just can't bring myself to eat hot soup in the summer months. We have A/C, but we keep it relatively high and soup just doesn't ever sound refreshing. Would much rather save it for the winter months and eat fresh foods in the summer.
We might clean out the fridge tonight, I think. Or else salads.

I made pizza last night, with a green salad.
I haven't made it in so long since two of us are gf and it's overwhelming to make regular dough and gf along with prepping the toppings. But it hit me that my dd (gf) is old enough now to deal with me just making pizza for the guys one night. They were so pleased! And it was really easy, especially since I just did pepperoni, no toppings that needed cooked or chopped. It helped to make the dough early in the afternoon and pop it in the fridge after it had risen for an hour. Now that I've broken through my fear of pizza night I'll prep toppings next time with kids helping.

Yea, I live in Michigan. So while there certainly are days that I do all cold food only, those days are not quite as often as other parts of the country.

The only heating of the kitchen to make my chili is browning the ground beef. Everything else is just dumped in the big crockpot. So for me, it actually keeps the kitchen cooler than lots of other meals. And we make four meals from it usually, using the leftovers as a base. YMMV

For me it's not about heating up the house...I'm actually not opposed to cranking the oven to 450 or 500 for roasted broccoli or homemade pitas in the summer. Which actually makes zero sense in comparison with a crockpot It's totally about the eating of it, and it's probably mostly mental. I just can't get past the mindset that eating hot soup is a cozy thing to do, and the last thing I want in the dead of a Tennessee summer is to be "cozy" Soup is supposed to warm me from the inside out and I do not want to be warmed like that when the heat index is 100+! I only want that on a day that is cold and/or gloomy + rainy.
