We made burritos with the slow cooker carnitas I made the other day... delicious!
It's from the From Freezer to Table cookbook 1 tsp ground oregano 2 tsp ground cumin 1 tsp chili powder 2 tsp salt 1 tsp ground black pepper 4-5 pound pork shoulder (aka pork butt or Boston butt) 1/4 cup lime juice 1/2 cup orange juice 1 TBS hot sauce 5 cloves garlic, minced 1 medium onion, diced Mix together spices and rub all over pork. Place seasoned pork into slow cooker. In a bowl, mix together all other ingredients. Pour over the meat. Cook on low 6-8 hours or high 4-5 hours (or until pork pulls off with a fork). When it's done, preheat a broiler and place the pulled pork on a foil-lined baking sheet. Broil for about three minutes. Spoon about 1/4 of the juices from the crockpot over the pork. Turn meat over with tongs. Broil 3 more minutes.
