I am having leftover ratatouille over brown rice. And a glass of wine .
Have chicken, carrots, green beans, cherry tomato and celery in the crock pot, and rice with veggie broth on the stove for the guys.

Tonight was pork chops I began marinating yesterday (white wine vinegar, Dijon mustard, garlic powder, onion powder, soy sauce) and put in the crockpot this morning. I "quickled" (quick pickled) some cucumber slices in a little vinegar, sugar and red onion, cooked some Basmati rice and steamed some broccoli with smoked salt. It was just the kids and I and it felt good to make something from scratch instead of relying on processed food or takeout.

We call that "taste plate" night. Either you get a smidge of everything and we all share--or we pick numbers and the first person gets to pick their fave from what is offered.

We had homemade pizza - one veggie, one bbq chicken, and a variety of half-cheese/no-cheese versions for the df among us.
