Have you tried other kinds of nut butters? Almond? Hazelnut? Sunflower seed?

They are all a lot more expensive than pb though...I have tried sunflower seed butter but I was not impressed. Maybe I'll have to try different combinations of veggies and dressings, like a salad on different kinds of bread...hmm |

Lately I've been stuffing pita bread with:
Hummus, sprouts, red onion, cucumber, mushrooms, and black olives. (I would add a kale leaf if I had some, though.) And it would be nice if I had some Braggs liquid aminos so I could marinade the mushrooms for a few minutes in some Braggs and olive oil. Mmmm.... Oh, and I ran out of hummus, so some kind of vinaigrette dressing drizzled on the sandiwich is good too! And sundried tomatoes rock on these kinds of sandwiches, but of course I don't have any at the moment. A vegetarian option would be to add some cheese. |

I <3 grilled cheese! You can change it up several ways to keep it interesting. Use all different kinds of cheese, different kinds of bread, add tomatoes, spinach, apple slices, etc. There is a restaurant here in town that makes some amazing veg. sandwiches, but they are not as practical to make at home. But they use such things as chickpea spread (hummus) and olive tapenade, and then add greens, onions, tomatoes, etc. They also make a green apple and gorgonzola sandwich. Another restaurant makes a sandwich with cream cheese, onions, green peppers, sprouts, tomatoes, and swiss cheese. Avocado would also be good on it. Another variation on the nut butter sandwich that I love is grilled nut butter and banana. Yum!

Cream cheese and jelly is a facorite around here. As well a cucumber/tomatoes with mayonaise or cream cheese

I'm a little late responding, but my favorite sandwich filling is mock tuna salad. You mash up a can of drained garbanzo beans, then add some vegenaise (or other vegan mayo sub), mustard and pickle relish. Yum!

A favorite of mine is sliced tomato, cucumber, and avocado on whole grain bread with either honey mustard or a vinaigrette. I'm not vegan, so for me it must have cheese. If you like raw onions or bell peppers, that might be good too.
I also eat a lot of grilled cheese. It's good with fresh tomatoes and sometimes honey mustard. I guess I'm a little addicted to honey mustard. Another favorite is pita or whole grain bread with grilled veggies - zucchini, squash, onions, etc drizzled with olive oil and balsamic vinegar.

My library has a Vegetarian sandwiches book. Perhaps yours does as well? I'm thinking Vegan Deli might have a nice list of ideas, too.
I like hummus with veggies or sub sandwiches. One of my favorite things to do is wrap leftovers in tortillas. I really like to make Teriyaki Tofu and rice or quinoa. Then you mix the leftovers together and wrap it up. Put in the fridge and it will be good for 2 or 3 days. I like to put some Chinese hot sauce on it while I'm eating it.

A new favorite sandwich for me is one that my sister made for me one day.
Take some hummus, broccoli sprouts, and tabouli and put it all on some pita bread. So simple and quick and man, it tastes amazing! |
