I have made dinner every night this week!
I am so proud of myself. Tonight, I made cheese enchiladas, black beans, and instant pot Mexican rice. It was really yummy. Every single person are it all happily , which almost never happens.

It's actually something I find easy to make too, so I guess it's a treat for me as well.

We are eating food from the freezer and whatever church people bring us but I had to pop in and say that this salad is giving me LIFE I have eaten it three times in the last three days and I still can't get over it. For some blessed reason I tend to crave salads postpartum (WHY can't I be like that during pregnancy?!?) and I have had some great ones but this one has been perfect. MIL made fried chicken before she left and I'm using the leftovers for it. Sadly today's is the last of it

Tonight is Zuppa Toscana in the IP. I'm cooking it up before baseball and taking the IP to the game. I'll serve up there. So tired of eating dinner at 8PM or later. Using thisoldgal.com's recipe but subbing coconut milk for the heavy cream.
Last night dh grilled sirloin steaks. I think dude at one himself. He was gnawing the bones after we had all eaten.

I need to make that Oriental chicken salad!
DS's ribs came out very tasty but a bit tough, probably underdone. He uses a meat thermometer (remote!) to know when to take them out and he doesn't want to overcook them. It's tricky keeping the fire just right, too. I hope he keeps trying. Tonight I'm making Pioneer Woman's chicken marsala, but with rosé which I happen to have in the fridge?? That might make it chicken rosé.

We had Zuppa Toscana in the IP. Recipe from thisoldgal.com I believe everyone liked it!
I brought it to ds baseball game. I also tweaked it just a bit. I used canned coconut milk in place of the heavy cream.

I switch up recipes all the time. Mostly because I forget to save them so when they ask for a repeat, I have to google and try to remember which one I used.
But this is what I used the last few days: https://glutenfreedaddy.com/flourles...bean-brownies/ subbing cooked beans (from dry) for the canned and as always I cut the sugar almost in half (but I do that all the time so my kids have adjusted to less sweet...). I also added walnuts.
