Default some quick Raw cake questions

My sweet DH bought some dates so I could make a raw cake. Problem is, the recipe calls for figs. Can I substitute? Also, do I need to soak them if they are fresh? Can I use a blender instead of a food processor, or will it burn out my blender? (DH says try it anyway, but that's because he wants a new blender...).
This is my first raw experiment, and I am nervous.

you got fresh dates?! wow....
i would sub...play around with the recipe...
i made this apple "cake" and it came out looking like apple granola...nothing was wasted and it was a great snack and cereal for weeks!

really? I used a cheapo blender for awhile and it did fine. DId you add the dates one at a time? I can see how filling ti full might kill it. yeah, a vitamix or a blendtec. check out the "will it blend" videos on youtube.

I substitute. If your dates are older or cold they will be hard and difficult for the blender to work with. Either soak your dates first or add some liquid to the recipe. Once you start doing raw cakes more often you will get a feel for the texture you are looking for.

It's o.k. This is how you learn The videos will help a bit, but even checking out a raw cookbook from the library will be good. The basics are that for most raw recipes you want to soak any dried fruits or nuts. Soaking the fruit will soften it up. When I get fancy Medjool dates, I do not soak them because they are already quite mushy. Nuts should be soaked because it helps to release the enzymes---better for your body to assimilate. Also, in the case of cashews and other softer nuts you will get a creamier texture when you make raw sauces and "puddings".

when i first started i had no idea what i was doing...
i made date paste one time and it came out like a drink...
it doesn't take long to learn...

i almost feel like a "pro" in the kitchen now

you'll get there.
