We had my grandma's recipe hamburger vegetable soup over the weekend and tonight dh "cooked" by getting pizza at Pie Five.

Tonight DH is out at band practise so my kids have asked for pizza.....and with the extremely hot weather here the last 2 weeks I'm happy to have someone else cook it!!
I'll toss a salad and cold meat together for me.

In to a pan with a bit of oil. When I started soaking the rice noodles. Then I took a huge glop of peanut butter in to my blender, probably 1/4 c, added in some fish sauce, grated freash ginger from the freezer*, tossed some garlic powder at it ( we are sadly out of garlic) added the time tinist squrt of surasha sause and about a half a cup of coconut milk. I bleneded tis untill it was smooth adding more cocnut milk as needed to make it a fairly thin sause ( closer to a tomato basil soup consistancy than broth) I kept the vegies tossing in the pan to get warm once the noodles had soaked I turned up the heat in the pan tossed the noodles in and then added the sause on top and stired untill well combined. The sause thikens when it gets heated up. Start to finish under 20 min because I had thin rice noodles. *this was the best gingr trick I have ever learned. Wash the root and then toss the whole thing in a zip lock bag in the freezer then when I need some I simply grate it in on my micro plainer and the peel just stays on the top because it is softer and the frozen girls get grates so easily. DD is 17 months and being weird about textures-no rice, no corn, no ground beef, etc. Uggggggggh....

Thursday I made spicy buttermilk chicken sandwiches and a feta-dill salad.
Last night I made shrimp quesadillas with a half avocado stuffed with a shrimp salsa and a southwest salad.
