Need help with a recipe
This is supposed to be a "hamburger" recipe. I've got to get someone to tell me how to get these to stick together, though. They fell apart on me just trying to get them in the skillet, but the kids loved them.
Bullion cube 3/4 cup boiling water 1 cup TVP 1 small onion, diced 1/2 tsp chili powder 1/4 tsp garlic powder 1 Tbsp Braggs 1 Tbsp tomato paste (for color) Combine, knead and use like raw hamburger. Except it completely fell apart. My kids were convinced that I discovered Mr. Crabs secret recipe for Crabby Patties (Sponge Bob). I won't tell 'em they're not, if you won't. I wonder if they just need time to sit before being moved to the skillet? Just to let the boiling water do whatever it needs to do to the TVP to get it to stick better?

More grain, either bread crumbs, cooked rice, oats, flour, something that absorbs BESIDES the TVP.

That sounds like it involves patience. I did let it sit while I was putting fries in the oven and whatnot, but maybe I didn't wait enough.

Not sure if you're replying to mine or post above but just adding the grain doesn't take any longer and you don't have to wait. I guarantee it'll hold together if you get the right amounts in there

If you're supposed to use it like raw hamburger, you should still add a binding agent. In meat hamburgers, that's usually an egg. I have no idea what to substitute for eggs if you're excluding eggs though.

I don't know if you are vegan, if NOT vegan you could put an egg in which would bind it a little during cooking.
If you do not have gluten issues I would suggest some vital wheat gluten, but you might not have that laying around. Adding some flour and kneading a bit to achieve gluten would also work too. |
