Singingmom - it was quite tasty but I'm not sure I will make it again because I'm the only one who really liked it. My younger DS was all "when can you make the lasagna you usually make? (PW recipe)

It was tasty. But I'm not very good at chicken. Even with my handy new meat thermometer, it's more often tough than not (at least boneless in the skillet). So that was a little disappointing, but the sauce was worth doing again.

Oh yes. I never do whole breast in the skillet for that reason. I either chop it up and cook it like that in the skillet, or use a different cooking method. Makes for a much juicier tender meat.

DH got a new grill so he really wants to grill tonight. He's picking stuff up on his way home for shish kebabs: teriyaki chicken, pineapple, red onions, grape tomatoes, bell peppers and zucchini. YUM.

How about grilled pork tenderloins? Marinade them in minced garlic and rosemary overnight or freeze them with the garlic and rosemary until needed. I usually add just enough olive oil to help the seasonings stick. Grill and serve with fresh, warm, chunky apple sauce. Alternately you can put apple slices in a foil pack to serve alongside the meat.
