We had enchilada casserole, instead of enchiladas on Tuesday too! Only I did beef. Sides were sauteed potatoes and onions and pinto beans.

Mon - Creamy Chicken Noodle soup

Wed - refried beans, bacon, egg tacos

Thurs - Chicken alfredo and pasta, roasted broccoli, caesar salad

Tonight I may make a sheet pan shrimp and veggie dish, or we might have a date night and the kids can eat leftovers.

I'm making Chinese Rice Paper Wrapped Fish tonight with Tilapia. Fingers crossed they'll eat it! My kids don't really like lettuces (except for cabbage, go figure) but they'll eat chopped salads made from all the other typical salad veggies, so I've got a cucumber-sesame salad and a pepper salad with lemon ginger dressing on the side.

I’m planning grilled cheeseburgers with the leftover cheeses from last night with baked fries and possibly salad.

I tossed a frozen lasagna in the oven as soon as I got home from picking up Margaret at school. Then dh showed up and said he'd not have time to eat.. so now I have a meal that my youngest can't have and my husband won't be around to eat.
It didn't require any work from me but I still hate "wasting" a meal like this. I know I'll just store the leftovers but ugh .

That's annoying, Deanna! I'm sorry!

I made Asian Lettuce Wraps tonight. Doubled it to take to a friend who broke her knee. I need to go make some dessert for her, too.

We did chicken fajitas in the crockpot and used the leftover chicken for quesadillas.

Something easy - either pasta or stir fry. The other one tomorrow night.

I'm hoping to make homemade gluten free pizza. I'm worried the crust won't work out.

I do! It's my sister's recipe. I'll type it up as is.

Green Pepper Soup

1 lb ground beef
1 lb beans
2.5 c. tomato juice
1 qt stewed tomatoes
4 c. beef broth
mushrooms
2 c. green peppers
1/4 c. brown sugar

1 tsp garlic powder
1 tsp onion powder
2 tsp salt
1/2 tsp pepper

_____________________________

I omitted the beans (no reason, just didn't feel like beans), omitted the sugar (I always omit or at least dramatically cut sugar). Measured nothing so I have no clue on the accuracy of measurements. Also because it's tomato season and I have an abundance of tomatoes, I just pureed a bunch of tomatoes and used that as the base alone with some bone broth.

Served over rice.
