Kale, need ideas?
So, I bought a big bag of kale and made a sausage, white bean, kale soup and that was super yummy....but I have a whole bunch left over kale....now need some yummy ideas what to make next?

Kale, need ideas?
We like it sautéed as a side.
Olive oil in a pan or large pot, few pepper flakes and sliced garlic about 2 cloves. Just barely enough heat to soften garlic. Turn up heat to medium high, add chopped or bite sized kale, salt and pepper and toss to combine. Add 1/4 cup of stock or water and cover until cooked till desired. I like mine with just a little bite. Add 1-2 tbs of balsamic vinegar and serve. This is about 1 large bunch worth. |

We eat use it for salad and sandwiches instead of lettuce, and in smoothies.

Yea, I serve kale sauteed as a side. It cooks down so much so it's amazing how much you can go through for one dish.
I sautee sliced onion and garlic in coconut oil until softened, then add the kale (deveined and cut in to bite size pieces), add some salt and pepper, toss, cook till it wilts, then serve. Super delicious.

I know people who make and enjoy eating kale chips. They're dried and seasoned bits of kale.

I like to mince up finely and add to things like spaghetti sauce and chili.Ypu can also add to eggs and ground meat before cooking

there's a kale salad recipe in the Smitten Kitchen cookbook that DH and I really enjoy. Let me see if it's on her site...

I threw together a soup with garbanzo beans, coconut milk and kale that was pretty good(seasoned with inion, garlic, and curry powder).
When sauteed, If your kale is bitter, squeeze in a whole lime or small lemon and add a small amount of water to simmer for a few minutes. Another way is to make soup with onion, chopped kale potato and chicken broth. Don't use too much water--the potato helps cut the bitterness.

I also highly recommend kale chips, along with several other previous posters. Delicious! Also, zuppa Toscana soup like Olive Garden makes is pretty amazing too. There are quite a few copycat recipes for it out there.

My only question is is there really such a thing as too much kale?
I'm actually serious. I can personally eat a whole bunch of kale sauteed as a side dish. It cooks down SO much from its original form.. Bananacake, what have you done with kale that your family loves? Worse case scenario I would imagine you can wash and roughly chop and freeze to throw in to soups later. I've never done it but I don't see why it wouldn't work.
