i always eat vegetarian refried beans b/c i don't eat pork. i have never gotten chunky pintos in sauce. i always get regular refried beans. some mexican places don't offer vegetarian refried beans, like Rosa's. i don't know if oil is added to the vegetarian beans at restaurants or not. i know the ones i buy in the store don't have oil in them. i cooked the pintos yesterday and haven't made refried beans yet. i might try for lunch today. i'm not thinking that i could get really smooth ones by just mashing them up in the pan. i'm tempted to just throw them in the blender. |

Re: refried beans
We make refried beans at our house all the time (and I have two authentic Mexicans living here ). Here's what we do:
Heat several tablespoons of corn oil in a pan (or olive oil, if it's me making the beans, rather than Vespera or Niteo ). Add a few slices of onion & saute the onion until well browned. Then remove the onion, allow the oil to cool a little, and add the beans. Mash the beans with a potato masher and add water until you reach your desired consistency. Salt to taste. I tried making them without cooking an onion in the pan first, and they weren't nearly as good. Don't skip that step!

Re: refried beans
I cook beans in the crockpot. I have a newer one that gets really hot. I love it! My old one took two days to cook beans. This one does it in about 6 hours or less.
I serve them whole the first day. Then I cook them again the next day OR I heat them up in the cast iron pan. The cast iron pan is the only thing I've found to make beans taste really good. But, you really need to use the beans that have cooked and then sat all night. I add whatever I have around to the beans the first time around.

Re: refried beans
the beans get smoother if you mash them while they are hot.
