All I do is a cook about a cup to a cup and a half of lentels, with salt. Then I cook my taco meat as normal - sate an onion in a smidge of oil ( I use greas fed beef so I wouldn't have enough fat to cook the onions if I didn't add it first) toss in a few cloves of garlic and then almost imedeatly i add one lb of ground beef. As the beef cooks I season with salt. Once the meat is all cooked o try to gather all the fat in to a corner of the pan to bloom spices in, I tend to over spice it atthis point. Then I drain the lentals and toss them in on top on the meat. I cotenue cooking them all together stirring to evaperate the extra water that hitch - hiked in on the lentals. If I am trying to hide it inwill keep stirring and mashing the lentels and the meat together untill it is a uniform texture. At this point I don't try to hide it with my family so I am just more casual about mixing it in and checking the seasioning. I started doing this when I was routinely cooking for our small group of 12 including two teenage boys and couldn't really afford to use 3 lb of ground beef. When I was hiding it I think I did a ratio of 1.5 lb of meat to 1c of overcooked lentels. Sent from my Pixel 2 XL using Tapatalk

Feeling thankful for quick meals today! I was at work and DS texted at 4:10 saying he had to leave at 4:50 for youth group. I ran home and whipped up some gnocchi that I had bought that was on sale at Costco, some spicy Italian sausages from Trader Joes's, focaccia bread from Trader Joes, and a Cesar salad kit. I literally had dinner on the table at 4:40 for everyone and it was pretty good!

I am making a low carb chocolate zucchini cake right now. I am going to serve it with strawberries and whipped cream. Hopefully the recipe is good! I had some zucchini left from my produce basket, and a friend is giving me more tomorrow, so I figured I had better use some up.

Well, it's after midnight here, and I am in the fasting portion of my intermittent fasting, but I went ahead and whipped up this cheesy zucchini rice (yes, yes, I know...I should be not doing the dairy thing... ). I am going to stick it in the fridge overnight so it will turn into resistant starch, and eat some tomorrow, with some chicken. It smells soooo good!
