Re: What are you eating in August?
Leftover again last night. I at least double batch everything.
Tonight - eat out subway or jjs. we have a soccer game 2 hours towards my family. so they will drive towards us, watch the game, all eat outside and we all drive home. Just my sister and 2 of her children (her children are adults). And then another family friend is brining her new baby for us to see. She was born in the Spring so the Rona kept us from going to her baby shower and no one has seen the baby yet. eta: Haha. that was a long explanation for what we are having for dinner. Apparently I am pretty excited about it.

Re: What are you eating in August?
DS #1 is making roasted cauliflower soup for dinner with fresh bread. Smells divine and I love it when I don't have to cook!

Re: What are you eating in August?
We did zucchini.squash noodles with pasta and red sauce and then enchiladas (sour cream and spinach, one chicken, one bean) over the weekend.
Tonight will be leftovers, tomorrow soup. And it's so warm, not sure why I picked soup. lol! One of the soups is an amazing vegan butternut squash soup, and Ill do all the chopping for it and tomorrow at the designated time dh can put it all in the crock pot. Ill chop the chicken for the chicken noodle soup too since ds doesn't like the butternut squash soup so will make 2 kinds. So really I am making tomorrow's dinner tonight.

Re: What are you eating in August?
Tonight was recipe fail. I tried to make teriyaki chicken & rice in the IP. Burn notice.
Thankfully, I had kept back some of the chicken and was able to quick cook them in the cast iron skillet. Turned it into bbq chicken sandwiches. Now to figure out how to rescue the chicken & rice.

Last night we has a meatball pasta bake (new recipe) and it was delicious. The kids want to eat the leftovers for lunch today, so there goes my idea of saving it for another meal Tonight I think will be "make what you like". I went shopping yesterday so there is plenty of everything.

Re: What are you eating in August?
A friend of mine usually gives me some garden produce every year, and she called on Thursday, and had a box of stuff for me. Anyhow, one of the things she gave me was a grocery sack full of pear and grape tomatoes. Plus, I got some cherry tomatoes in my weekly produce basket, so I figured I had better use them up. Tonight I made homemade tomato soup and grilled cheese. So yummy! This is the one I made. I also added a little bit of fennel leaves to the broth when it was boiling, since my friend gave me some fennel, too. Then I added sour cream, instead of the heavy cream it suggests. https://www.spendwithpennies.com/fresh-tomato-soup/

Re: What are you eating in August?
Last night was tuna or chicken salad in a spinach wrap.
I need to meal plan and buy. I don't know what we will do for dinner the next few nights. Maybe we will grocery shop this afternoon. I need to make a list.
