Lamb stew with apricots. I found a small package of lamb stew meat when cleaning out the deep freeze. It won't make much should suffice for a decent dinner. Sweet potatoes and some sort of red cabbage salad/slaw. And planning a trip to the store!

Last night - grilled chicken with my favorite new marinade LINK (made extra chicken for lunch salads etc)
Tonight - chuck roast in crockpot, roasted asparagus Tuesday - oatmeal pancakes (making extra to freeze) Wednesday - leftovers/salads Thursday - DS's birthday choice! - steak, PW crash hot potatoes, green beans Friday - Chili, salad Saturday - tilapia, roasted broccoli

I brought out the crock pot for the first time in a long time. I had forgotten how great it feels to have dinner ready about the time you'd normally have to get dinner ready.
I dropped in frozen chicken tenders, a jar of salsa, two cans of black beans, one can of corn, two cups chicken broth, half a can of pumpkin, 1 1/2 t. chili powder, 1 t. cumin, 1 t. salt. I shredded the chicken when it was finished cooking and served it over rice. Sour cream on top would have been a nice addition.

Early bird picked so we had meat loaf and roasted baby brushel sprouts with pomigranet bisalmic vinegar.
I hate doing meat loaf it is so expensive and hard to steach it over many meals.

I roasted 2 spaghetti squash last night, while making supper, and shredded them, and let them drain in the fridge overnight. Tonight, I mixed with wilted, chopped spinach, diced bacon, garlic, and parmesan cheese. Baked, and did roasted broccoli.

Tried a new recipe tonight because I had some leftover shredded chicken to use up. Creamy chicken taco pie. http://www.garnishandglaze.com/2014/...cken-taco-pie/ I used corn tortillas so it was gluten free. And everyone loved it! So good news!

They were very yummy! I used Aldi's grassfed beef to make patties and seasoned them with salt, pepper, granulated onion, granulated garlic and grilled them until done. Then topped with gouda (also from Aldi's) and let it melt. Served them topped with oven-baked bacon, romaine lettuce, tomato, pickles, mayo and mustard on whole wheat buns for those who could eat them and on lettuce for me.

I was short on time last night so we had chicken sausages with peppers and onions and a side of steamed broccoli.
Tonight I'm thinking some variation of hand pies stuffed with ground beef and veggies.
