Is This Cake Ruined?
I am so mad at myself.
I accidentally used 3/8 cup less flour and sugar than the cake recipe was supposed to have. It was supposed to be 2 1/2 +1/8 cup of each. What will that do to the cake? We are celebrating DH's birthday tonight, and he requested that his normal mocha cake be made into three layers. I thought I could just make 1.5 of the recipe and make three layers. In order to not make errors, I tried scaling it in Plan To Eat, which usually is flawless, but the original was 1 and 3/4 cup each flour and sugar, and it only scaled the "1"s and not the 3/4. I realized that as I was looking at the original recipe later. The cakes look OK, but I am wondering what less flour and sugar do to the cake's flavor and texture. I don't think I have time to make another.

I would think it would be slightly less volume because of the small amount of flour missing, but not much. I have reduced sugar in recipes before without people noticing. Plus, the amounts left out sound like they were proportional? If so, I think you will still get the original flavor, you will just have a slightly smaller amount of cake. I think it will be fine

All the liquid and leavening were scaled properly in Plan to Eat, so they were increased by 1.5.
I have used too much liquid in cake before, and that has produced a weird shape and falls a bit. These look nice and evenly baked. They are flat, though. Usually, I have to level it a bit. Since I don't have a dome to cut off, I can't taste it. I hope you are correct! Ganache fixes everything anyway, right?

From the way you describe it, it might be even better! Cakes often have too much sugar anyway. I hope it's good!

Let us know how it turns out.
I cut the called for sugar in half for pretty much every recipe I make. Never affects it negatively. Also I am well known for not exactly measuring ingredients. My family jokes that each time I bake something it's a little different. I've not yet had a bomb.

I always cut sugar with no problem. Since you cut sugar and flour evenly, it should be fine! (but I have no idea what Plan to eat is )

Well, it was OK. No complaints! The whole thing was a little too chocolatey, but I don't think that was the cake.
Thanks for all the feedback/input. BC, Plan to Eat is an online meal planning/recipe storage website. There are many threads on it that can tell you more, but it is fabulous.
