Boys: corn bread and beef chili
Girls: Mac N Cheese Side: Grilled Asparagus I rarely cook mac n cheese bc I lost my routine of making it from scratch and only dd really likes it. Ds wont eat it and me and dh will eat it but don't enjoy it in proportion to the unhealthy factor. But dd has been craving it.

We had Butternut Squash Risotto last night. I added garbanzo beans at the last minute to make it a meal.

We had sheet pan chicken parmesan using the sauce we made in September, with whole wheat spaghetti and caesar salad.
And we had an unexpected dinner guest! Ds1 moved into his own place in August and dropped in for a visit this afternoon. (We've seen him since his move, this was just an impromptu stop which made me ridiculously happy. ) |

Green enchiladas. Side salad or peas and carrots. We do salads 4-5 days a week for lunch so running out of desire to make more salads. but on the other side I only have lettuce, carrots and froz peas left in the vegetable department.

I have soooooo much butternut squash in my garden that I've been processing like a fiend this week. Last night we had Butternut squash soup with grilled Lemon chicken, after Butternut risotto a couple of days ago. Oldest asked for Butternut Mac and Cheese sometime this week. I wonder how long it will take them to be sick of Butternut squash?
And, because a huge percentage of canned pumpkin sold in this country is actually butternut squash........... I'm not going to feel the least bit guilty about using the butternut puree I have in the freezer, calling it pumpkin, and using it in Pumpkin muffins and Pumpkin Snickerdoodles and Pumpkin biscotti!

Great ideas to use your puree, Darcy! I made a delicious soup with butternut squash a few days ago. I roasted cubes of squash with onion and apple, then pureed that with coconut milk and broth, and salt and pepper. I don't know why it took me so long to realize that the way roasting veggies brings out so much flavor is a good thing for soup!

Made an egg casserole with some swiss chard I needed to get used. I wasn't sure what to expect, but it was pretty good!
