Tonight was Linguine, side roasted asparagus.
Tomorrow is pretzel bread sandwiches with a TBD veggie (salad or raw carrots and sweet peas or maybe steamed broccoli. Those are the veggies I have so has to be one of those).

We had Chicken Lazone and steamed green beans, plus rice for dh and dd2. Littlest had bread and butter.

Greek gyros, marinated Greek salad, riced broccoli and cauliflower - I made mine into a salad since I can't have pita bread.

I made this recipe up for Greek gyros:
1 lb ground beef, crumbled and browned, and seasoned heavily with pepper, oregano, garlic, and granulated onion; salt to taste Dill yogurt sauce: 1/2 - 1 cup mayo, 1 cup Greek yogurt, lemon juice, salt, pepper, dill, granulated garlic, granulated onion. Stir all ingredients together. I'm sorry I don't have measurements. To assemble: Top or stuff pita with ground beef, shredded romaine, slivered red onion, thinly sliced cucumbers, sliced tomatoes, crumbled feta, and dill yogurt sauce.

I was craving hibachi chicken, but didn’t have $40+ to plunk down for it at our local Japanese place, so I decided to make something similar. I cubed some chicken breast and fried it with some oil and butter . I served it with rice, broccoli, and shrimp sauce (aka yum yum sauce).
Delicious! Dh and Ds don’t like the sauce, so it was just basic chicken and rice to them.

HOW TO COOK A WHOLE FROZEN CHICKEN IN YOUR INSTANT POT Someone asked how I did this a while back Here I finally am with a recipe! I did 65 minutes because my chicken was pretty big.
