I'm thinking of making up a mexican turkey and rice soup tonight. I have some jalapenos in the fridge, too, so I think I'll make stuffed jalapenos.

More leftovers. The kids pretty much just ate pumpkin bread. It has a veggie so it counts as dinner right?

I scored a huge hunk of mozzarella for less than $2 per pound and made this:
Mozzarella Cheese Casserole --------------------------- Butter, olive oil, or both--about 1/4 cup total 1 pound bite-sized pasta--regular, whole wheat, or a combination 2 or 3 medium to large yellow onions 2 tsp. sugar 2 tsp. salt (Boneless giblets of 1 or more chickens or turkeys, or some mushrooms) (More cooking fat) 1 cup of the yummiest broth you can find 3/4 lb. or more grated mozzarella cheese Parmesan cheese to taste Preheat oven to 400 degrees F. Cook pasta all dente on a back burner. Meanwhile, grease a 9x13 pan. Sliver the onions and saute in about 2 tablespoons butter on Medium just until no longer acrid. Stir in sugar and salt, cover, reduce heat to just below Medium, and leave for 20 minutes, until tender and golden. Meanwhile, finely dice the giblets and cook in butter in a separate pan just until no longer pink, or saute some sliced or chopped mushrooms, if using. When the pasta is done, drain it and return it to the pot. Pour in the broth, scrape in the onions (and the giblets or mushrooms if using), mix, and pour into the prepared pan. Cover evenly with the mozzarella and Parmesan and bake until nicely browned and bubbly. Serve with a dark green vegetable. Makes a main dish for 2 meals for 5 hungry people.

We had tacos last night too--with ground venison that had been in my freezer forever. Glad to finally get it used (and find that we couldn't even tell the difference). Gosh I wish we could hunt or raise our own wild, cheap meat!
Cranberry pecan chicken salad in lettuce wraps tonight.

We had stroganoff last night using venison. I used to have such a hard time with dh hunting for months in the fall, but I'm used to it now and I love the meat.

Last night was chicken with mushrooms, roasted sprouts, and baked potatoes. Tonight is crockpot Thai red curry beef over rice.
