Default Natural consequences (funny story)

So my ten year old helps me with grocery shopping nowadays and I often ask her to grab a loaf of bread for me. Well,she thought she could slip "chocolate bread" into the cart and mom would never know. Y'all,this loaf of German dark wheat has lasted all week!
This is one time I don't have to do anything. Just go about life and let my daughter learn 1. Chocolate bread is not a thing 2. Labels are our friends

Wait, I thought that was my 10 year old's definition?

Only with her it works both ways - she'll put cream cheese on a healthy muffin in order to make it into a cupcake.

So, I love this recipe out of The Cake Bible:

3.5 T dutch-processed cocoa
3T boiling water

1.5 t vanilla
3 eggs

1.25 c cake flour
.75 c +2 T sugar
.75 t baking powder
.25 t salt
13 T softened butter

This is made using the "Reverse Creaming" method. Essentially you mix the wet ingredients together, add some of that and all the butter to the dry ingredients in a mixer and beat well. Gradually add the rest of the liquid. (You get a better texture that way and are less likely to overmix the batter.)

Bake in a loaf pan at 350 for 50-60 minutes.

No frosting necessary!

While we're on the subject of Chocolate Bread I made this today. It's NOT a cake! The dough itself, without all the added chips and glaze, is a lovely, soft yeast bread with a subtle chocolate flavor. (I used Special Dark cocoa for this, which is more intense than regular cocoa.) Add the filling and it's a decadent treat.

FYI, I skipped the sponge step and just used added that amount of yeast to the second step. The initial rise took longer than 1 1/2 hours, but it was a cool-ish day here, too. The sponge would probably give a more complex flavor along with a slightly faster rise, but isn't necessary.

This bread sounds dreamy!! Gotta get more cocoa powder and then I'm doing it!
