Taco salad tonight.
One of my sons is trying out eating vegetarian. I want to support him, although he's told me he'll gladly make a pb&j when I want to make something like meatloaf. I already cook for two gluten-free people and one allergic to milk. Why not add vegetarian?! Sometimes I'll offer meat on the side, but I need a handful more good vegetarian meals. I'm sure there are old threads to search, so I'll start there. Oh, and my other son's new girlfriend is vegan. I need to get busy.

We still have leftovers from Christmas so I made turkey casserole because I'm sick of the sight of leftover turkey in the kitchen. The taste, however, I can definitely live with

Virginia and Singingmom, check out ohsheglows.com. I've found her book by the same title at several libraries. Her recipes are easy, fast, flavorful, healthful, made with 'typical' ingredients and are all vegan. Most are soy and gluten free, too. I'm betting you can find recipes that please everyone without having to be a short order cook.

Tonight we had aglio e olio and some bbq meatballs. Yesterday we had Guo Kui which is a favorite of one of my kids. It’s basically meat smeared onto dough, rolled up, flattened and fried. Second pic in this link. http://food.chinesecio.com/en/articl...ent_155337.htm
