I normally love meal planning! What's wrong with me lately? It seems like such a chore. I was trying to get a head start on next week's meals and it took me like two hours to come up with six meals.
Oh and tonight is supposed to be smothered burritos and Mexican slaw, but I'm not sure if we will be home to actually make it and eat it.

I've been in a slump too. I love cooking and meal planning but every few months I just don't feel like it for a a few weeks. Then I get reenergized.

Same here.
I gave up Baking (treats) for Lent. (Baking is my Happy Place; it's cathartic and the one creative outlet I have that my dh and kids can't muck up, try as they might.) As it turns out, I have a lot more creative energy for dinner creation. That said, I'm still stumped for tonight. Saturdays tend to be leftover night, but we don't have any leftovers.

So I ended up making Spicy Butternut Squash Soup plus Biscuits and Sausage Gravy last night for dinner. A weird combination, but something for everyone.
Tonight I have a home-corned brisket simmering away for a New England Boiled dinner for DH. It's not going to be done until rather late, so I may just let the kids have nachos or heat and eat from the freezer if they can't wait.

Tonight is finish off the leftovers (there isn't much - enough for 1 person to have Chili but not ds bc it's the vegetarian left and 1 person to have a serving of soup if that one person is me bc there is not enough for anyone else) OR fend for yourself. Im driving the boys carpool which starts before dd is home from track then she goes to soccer so its not a sit down meal night anyway. after soccer I will grocery shop so the rest of the weekdays has food.

Meal plan for this week
Sunday we had air fryer roasted chicken with pearl couscous (brown rice cup for gf kid) and oven roasted asparagus. Monday: crock pot white bean soup with cracked whole wheat bread (gf option for dd2) Tuesday tortollini with pesto and roasted vegetables possible side salad Wednesday take out day will decide that day. Thursday- sheet pan vegetables and chickpeas served with quinoa Friday- fish sticks with mac n cheese and salad Saturday- either frozen pizza and salad or pasta e ceci and salad depending on Margaret's ballet rehearsal schedule.

Soup for us tonight, I think. Dd1 persuaded dh to buy pizzas for tomorrow, and she’s cooking on Thursday so I’ll get a couple of says off (though I’ll make a salad to go with the pizzas).
