We had chicken in a mustard sauce with roasted asparagus and wild rice. And spinach salad.

Tonight is chicken stir fry with veggies and pasta (weird I know but that's what DS #2 chose )

Last night we had General Tso's Turkey over rice with stir fry veggies and mandarins oranges. Tonight I'm making a Mozzarella pasta bake and marinated vegetable salad which we will also eat tomorrow night.

I'm making Italian sausages and Gnocchi with pesto for dinner tonight. (It was originally going to be green gnocchi, but I forgot to get spinach and I just don't feel like going out again. )
DH has been hounding me to corn a beef brisket we had in the freezer, but I kept forgetting to pull it out to thaw. I suppose he got tired of waiting because he has the brisket corning in the extra fridge. It won't be ready until this weekend, though. I'll make him his NE Boiled Dinner on Sunday.

I forgot about corn beef and cabbage. DD won't eat it and dh doesn't like it. I usually make it because I like it. Maybe Ill pick up one after today and make it for ds and I for this weekend.
So tonight is salmon, rice, roasted brussel sprouts.

Ds has a soccer game across town this evening - so leftovers.
Tomorrow we have lunch with inlaws and bday celebration for my BFFs hubs. Its a whole family thing - we will archery, do a little walk and celebrate in their backyard afterwards. But no cooking til Sunday now! I actually don't mind cooking, but I also really enjoy the break. Like if I could cook 2-3 days week - that would be perfect. A lot of it is the planning. I did one of those box meal services and that was really nice for a few weeks. I canceled it but maybe should try another (I canceled bc they said here is a great deal for health care workers but then I noticed it was a worse deal than anyone can get so was annoyed by that). Anyone do a good one?
