Last night we had Lemon chicken cutlets and a salad bar.
Tonight's dinner was Tilapia with spinach pesto, green beans, and oven-roasted potatoes. mummy2boys, I'm sorry about your arm. I hope it heals quickly!

Stir fry tonight or maybe egg roll in a bowl. I was going to do stir fry but dd had a track meet added tomorrow night so not sure Ill cook tomorrow night. And the egg roll in a bowl will make more leftovers so might make sense if I flip those 2 around.

I actually did a meal plan
Today is vegetable stack ups ( hamburger patty toped with mashed potatoes/ cauliflower and cheese sauce with peas) Tacos Pasta with meat balls Meat, millit, roasted cauliflower and green beans Pizza ( because my children couldn't come with anything they wa red to eat - they hate pizza) Orange chicken Asparagus hash and develed eggs. Took some ground beef out of the freezer and I have some leftover corn from yesterday so I'm going to make a nostalgic dish my mom used to make called pile on - ground beef, gf macaroni noodles, corn, seasoned tomato sauce and cheese piled together.
And I did get my meal planning finally done and groceries ordered.

I need to use things in the freezer, so I pulled out a batch of turkey-ricotta meatballs I made last month. Oldest wants Meatball Casserole (meatballs smothered in pizza sauce and mozzarella) but Littlest wants mashed potatoes and gravy. I'll figure something out!
