I simmer them for about 4 hours with liquefied onions, garlic and bell peppers and am careful not to add salt until they start to soften because I have been told that salt inhibits them getting soft. I have also been told that garlic inhibits gas.

I have a really good crockpot and I use it to cook my beans. I find it a pain to keep an eye on the stove.

Sprouting beans was highly recommended in The Makers Diet. I soak for 8 hours, then drain the water and cover, putting in a dark place (like under the sink) for 8 hours, then cook as normal.

Yep! It actually seems to make them easier to digest and doesn't cause me get gas like I do with unsprouted beans.
