My black bean and cilantro salad
Today I found some AMAZING organic, local, super fragrant cilantro at the farmer's market, so I had to find a way to use it
* 4 cups chopped tomatoes (I used organic canned, fire-roasted, diced) * 1 cup frozen corn (canned or fresh would be great, but I didn't have it) * 1 (28 ounce) can black beans, rinsed and drained * 1 cup minced fresh cilantro * 1/4 cup lime juice * 3 tablespoons olive oil * 2 1/2 teaspoons chili powder * 2 1/2 teaspoons ground cumin * 1 teaspoon pepper * 1/4 teaspoon salt Mix the tomato, corn, black beans, and cilantro. Then blend the rest of the ingredients in a cup and pour over the bean mixture. Toss it and stick it in the fridge for at least 2 hours

Punkie-a couple questions...
How many servings did this recipe yield? I'm going to make it for a family get together this weekend where there will be 7 adults. Do I need to double it, or will I be ok? Also, I noticed that it calls for 2 1/2 tsp of chili powder...is it very spicy? That would be great for me, but since I'm making it for others I just wondered. Thanks!

Mine was not that spicy You could always just add more beans if it is, lol. We just kind of munched on ours, and it was good for our family for 2 days, but we're not big eaters. You may want to try doubling it. I've seen the same recipe but using pinto AND black beans, so maybe toss some pintos in there to bulk it up.

That sounds REALLY good! I love black beans and I ADORE cilantro! I've been craving some of the pico de gallo that a local restaurant makes, maybe this would take care of my craving (and I'd get some protein to boot).
I may not be able to find fresh cilantro- do you think it would be alright with dried?

I made some for our Memorial Day cookout and ! It was so good! I halved the recipe since I had a 15oz can of beans and I used a commercial brand of petite diced tomatoes with green chiles (gotta get back to the hfs for organic tomatoes). I munched some more for dinner and it will probably be lunch again today.
I think this will work well for church potluck too, it should help balance out all the mystery meat dishes.
