Tonight is Shredded BBQ Chicken made in the crock pot on homemade rolls. I think we'll have peas to go with it. (I just don't feel like really cooking!)

Last night we had Grilled Mahi Mahi Fish Tacos with Chipotle Lime Crema since it's in the 90's here ! Tonight I had a menu planned, but we have so many leftovers in the fridge so I think we'll have a leftovers night, much to everyone's disappointment. Usually they get eaten for lunch, but not this week!

Last night we had Grilled Chicken Satay with Spicy Peanut Sauce, Thai-Style Grilled Zucchini, and grilled naan bread. Super yummy and big hit with the kids!

We had chicken broccoli stir fry. Easy and fast.
basmati rice for most of the family, and I ate cauli rice. Did you all know that Trader Joes has riced cauliflower in bags now? I paid $2.49 for a bag. I thought that was a good deal because cauliflower is $3.50 for a small head. I really dislike making cauliflower rice, it is so messy. I usually have the best of intentions, but then just decide it is not worth it. So, this was so nice to have.

Yes, I love TJ's cauliflower rice! How do you make yours? I usually roast mine in the oven, but I only have one oven rack so it's not enough for my family so I rarely make it. I'd love to find a new way that's tried and true, where I can make a larger quantity. I'd probably need two of TJ's bags for my family.

That does seem like a good deal when you consider the time and mess of making your own. Laurlor, how long do you roast yours?
I'm planning tacos tonight, but I have a child with the flu I think, so I'll put some chicken in broth in the slow cooker now to have chicken soup when he's feeling up to it.

I usually just watch it until it starts browning....then I stir it and let it cook a little longer. I'm guessing 30 minutes?? I usually caramelize some shallots or onions on the stovetop and stir them in afterwards. Super yummy!
Tonight my kids requested Creamy Chicken and Wild Rice Soup with breadsticks. It finally feels like soup weather! Yay! I'm also trying these Pumpkin Cheesecake Cupcakes with Salted Caramel Sauce because our Life Group is meeting at our house tonight after dinner.
