October Main Meals
I'm looking forward to October because I love soups and stews and fall comfort food. I can't wait to see what you are cooking!
Please share what you are making for your main meal each day and share a recipe if you have it. Bonus points for a pic! I've found so many new things to incorporate into my meal planning because of these threads. Tonight I'm planning an Asian marinated grilled flank steak, baked potatoes, grilled radicchio, grilled mini peppers with spinach artichoke dip. It all sounds like a really weird combo now that I've typed it out. Hopefully it will be yummy!

Yay for fall! It's the best time of year for lots of baking.
Not my dinner, but I had to share this. I had sushi today for lunch for the first time ever. Oh my wow. I had no idea I could love it so much! So delicious!

I was going to make tacos but the temp dropped down to 65 today so I'm pulling a homemade chicken pot pie out of the freezer. I love fall foods.

Technically not October, but I made the most amazing dinner ever last night. Massaman curry chicken and carrots, gingered bok choy, and coconut rice. It was heavenly. Tonight we're having some sort of spiced lamb meatballs with the leftover coconut rice.
I also made awesome lentil soup for lunch. The boys ate it, G even asked for a 2nd bowl!

Lasagna!
I don't really have a recipe, it's just layering a bunch of yummy things I have, like homemade sauce (with lots of veggies), to which I added sautéed mushrooms and shredded zucchini. So yummy. |
