suggestions for saving my soup
I made a new recipe tonight, Butternut squash and apple soup, and we didn't like how it turned out. It's a pureed soup with basically onion, squash, apple, vegetable stock and cinnamon/nutmeg. The flavor was very blah. Any ideas on how to make it better? I don't really want to throw it all out, but I know we won't eat it as is.

Maybe some fresh grated ginger? Some maple syrup or honey might give it some depth...

The butternut squash soup recipe that I've used calls for many of the ingredients you listed, but also 1/4 c. maple syrup and cayenne pepper to taste. The pepper actually gives it a nice little zing without making it spicy. My recipe also calls for it to be served with toasted baguette with goat cheese and chives. It seems to cut the sweet of the soup with something more tangy.

I like topping soups like that with things like sour cream, cheese, croutons and green onions (and bacon, but you used veg stock, so I'm assuming vegetarian). Things like that tend to punch up the flavour. Even caramelized onions on top will give it a nice kick.

Ooh, never thought of apples in it. I add salt, ginger and tad of curry to mine, and evaporated milk or coconut milk and sugar.
I also put chicken in since it's not very filling alone, yk?
