Mexican Quiche
This isn't a vegan recipe (milk,eggs, obviously), but thought I'd share what we had the other night for dinner.
Instead of a pie crust, I used corn tortillas to line an oblong glass dish. Next, I put in some chopped scallions, red bell pepper and green chilies, fresh cilantro and some finely chopped swiss chard (didn't have black beans, but those would have been great!) Next I poured the egg/milk mixture in and topped it off with some shredded colby jack cheese. Forgot to mention that I used some dried ground chipotle peppers and dried cumin in the egg mixture. Even my pickier kids didn't mind the green stuff. |

I don't know the ratio of milk/eggs. I did use 8 eggs for an 8 inch square pan. I just poured the milk in until it looked right. I'm sure you could just look up any recipe for quiche and copy that ratio.
