Vegan freezer cooking?
I really could use some help.I would like to put some meals in the freezer and I dont know what I could put in the freezer other then just beans.Any help? thanks!

Not vegan but interested in some new recipes. I have noticed some really creative looking vegan cookbooks at our local library lately.

This is one of my favorites right now. I double the recipe and use it as a filling for enchiladas. (Need 8 flour tortillas, 1 15 oz can enchilada sauce & a handful of cheese for the top.) Then I put the extra filling in a wide mouth mason jar for the freezer. The night before I need it, I put the mason jar in the fridge. Dinner is super easy. I've never assembled the enchiladas beforehand, but that's another option.
**I'm not vegan, but it would be easy to make it vegan.
