Default your absolute FAVORITE veggie/vegan recipe

so, we are not veggie/vegan, and are currently not making any plans to become so however, we are trying to limit our meat consumption (for both health & ethical reasons) by halving out our recipes- half with meat, half without. i've found some yummy veggie/vegan fare, and also some really stuff. SO, i would love to pick your brains....i'm not asking a lot, just post your #1 favorite recipe....i figure if everyone does that, i'll have quite a repertoire

Here is my favorite veggie recipe

Spicy Anasazi Beans w/Roasted Root Veggies



1 cup dried anasazi beans(or can use pinto beans)
3 carrots cut into 1/2in cubes
2 parsnips cut into 1/2in cubes
5 baby red potatoes cut into 1/2in cubes
1TBSP ex-virgin olive oil
1/2 tsp salt
1 chipotle pepper paked in adobo sauce, chopped
1tsp balsamic vinegar
1/2 cup cilantro
1lime cut into wedges


1.In sauce pan over med-low heat, simmer beans in 4cups of water for 45-50 min or until most of the water is gone.
2.Heat oven to 450 arrange veggies in a single layer on baking sheet and sprinkle with olive oil and salt.
3. Roast veggies for 15-20min
4. Stir chipotle and vinegar into cooked beans
5. spread on platter and top with veggies, garnish with cilantro and lime

290 cal with 5g of fat

My favorite dinner is:
rice, black beans, corn, salsa, onions, (sometimes sauteed onions and peppers) lettuce when we have it, LOL (even though we're vegan, I don't always have lettuce, ) basically just mexican stuff sans meat

The kids like gardenburger and fries, and gardenburger riblets.

It's so hard to pick one favourite. There are so many delicious recipes, my favourite is different all the time. I really love this one at the moment, because it's simple to put together and pretty tasty too. This is my variation of "Eternal Soup" from Passionate Vegetarian by Crescent Dragonwagon...

Place the following ingredients in a crockpot:
- 3 cups assorted beans (cooked), lentils or split peas (dry) I usually do 2 cups of lentils/split peas to 1 cup of cooked beans
- 1 cup good quality vegetable stock
- 3-4 cups mixed vegetables, fresh or frozen
- ½-1 cup of "something tomatoey" (diced tomatoes, salsa, pasta sauce)

Add boiling water to cover. Turn crockpot on high, simmer for as long as it takes to cook everything, anywhere between 2 and 6 hours. I love this recipe because I can throw everything in the crockpot at lunch time, and know that dinner will be ready when DH gets home. Served with some crusty bread, it's delicious!

Oh yeah, the "Eternal" part of the recipe is that you eat what you want today, then tomorrow plug the crockpot back in, top up with some more beans/veggies/water and cook again. But ours never makes it past the first day!

I'm really nervous about posting a "vegan" recipe on here because we're not really vegan and I'm still learning so much by reading this board. I'm afraid that my "favorite vegan" dish will end up being not vegan somehow. Like someone will say, "Um Teacher, didn't you know that canned tomato paste has meat product in it." So if I make a mistake, someone please let me know.

This has been one of my family favorites for years. I found it in my grandmother's recipe books after she passed away. If you read the ingredients it sounds like it would taste terrible (peanut butter and tomato paste ), but it's really yummy and very addictive--the accompaniments listed at the end add that special touch (I especially like the coconut and peanuts on top). Anyway, it usually calls for chicken broth and chicken but I changed it up and used vegetable broth and no meat and it was just as good, if not better!!!!

Gold Coast Stew

2 Green Peppers cut into rings -- we used Yellow Peppers, mmmm...
1 Medium Onion; sliced & separated into rings
2 tablespoon Shortening -- I used coconut oil instead
1 can Tomato Paste; (6 oz.)
¾ cup Peanut Butter
3 cup Vegetable Broth
1 ½ teaspoon Salt
1 teaspoon Chili powder -- we used 1/2 teaspoon of Cayenne Pepper tonight, mmmm...
1 teaspoon Sugar -- we used honey but I know many here probably don't do honey, right?
½ teaspoon Nutmeg
6 cup Rice; cooked -- we used brown rice since it's whole grain
Accompaniments: eggplant slices, sauteed banana, peanuts, shredded coconut, pineapple chunks, onion, and tomato

In a large skillet, cook and stir peppers & onion in shortening until onion is tender. Drain off oil.
In a medium bowl, blend tomato paste and peanut butter. Stir in broth & seasonings.
Add broth mixture to skillet with onion & peppers and cook and stir over low heat until heated through.
If the stew is too thick, stir in additional broth. Serve over rice and sprinkle on your choice of accompaniments. Makes 8 servings.

ACCOMPANIMENTS: Chopped green pepper; shredded coconut; coarsely ground or chopped peanuts; sauteed bananas or plantains; onion, tomato and eggplant slices; pineapple cubes.

Original Recipe (before I messed with it) was from the old Betty Crocker Recipe Card Library found in my grandmother's cupboard.

We use Earth Balance instead of butter, Bragg's liquid aminos instead of soy sauce and raw, unsalted cashews instead of cooked salted ones because they absorb the flavor of the sauce better and it cuts down on the sodium content.

Just tried Sara's suggested Sweet Potato, Squash, and Apple soup (from How it All Vegan) last night along with the Garlic Hummus and Avocado sandwiches (from Vive le Vegan). WOW! That was just TOO yummy and so yet easy to make. I'm now completely addicted to the hummus--I'm already trying to fit more fresh lemons into our monthly budget so that I can keep this spread as a staple in our house. I'll be oozing garlic for a long time.

My absolute favorite is potato pancakes aka latkes. They are fattening especially being fried in oil, but oh so good! I'm making them for dinner tonight! They are Rabbit's favorite too. We usually have applesauce with them. If you want the recipe, let me know and I'll pm you. I don't even follow a set recipe anymore, just throw the ingredients together. It does have 1 egg in it though.

We loooove sautéed veggies and whole wheat pasta/buckwheat/rice.



Dice:

1 eggplant
3 zuchinni
a hanfull of mushroom'
4 cloves garlic
red bell peppers

Cook them in a large non stick skillet with olive oil, then add sea salt, pepper, capers and any spices you want. Toss in pasta with a dash of lemon juice and oil, and salt again to taste, if needed.
