Groundnut Stew (Peanut Soup)
This is something I ate growing up in Africa.
I know it sounds weird, but it is actually delicious (and I'm very picky). It's also really easy, and all of the proportions are negotiable. Ingredients: *** Broth: water & veggies: (Carrots, Celery, Onion, Garlic, etc.) (We always started with a whole chicken, so I'm guessing about the broth part.) *** Tomatoes -- 4 or 5 or so, cut in wedges *** Onion -- 1 large or 2 small, cut in wedges *** 1 jar natural un-sweetened Peanut Butter (it's not supposed to taste like American peanut butter, just ground up peanuts) *** Red pepper, salt & black pepper to taste *** Optional: Boiled eggs -- whole or halved -- enough so the kids don't fight over them *** Rice to serve it over. Directions: Make a pot of broth & season w/ s & p to taste. Once it's hot & yummy, strain, then add tomato & onion & jar of ground peanuts. (You may have to kind of break it up or spread it out so it dissolves & doesn't just sit in a lump on the bottom.) Simmer, stirring occasionally, until a layer of oil forms on the top. Add red pepper or allow each person to add own to taste. Float boiled eggs on top. Serve over rice. (If you want to be more authentic, make it so spicy your nose runs, and serve it over fufu--gooey pounded starchy African yams. Since it's in the veggie forum, you get to skip the mysterious animal parts that usually float around.)

This sounds so cool! I would love to try it. I actually have a jar of pre-made peanut soup, and I have eaten boiled peanuts, so I know they are a versatile little item. They don't have to be all sweet like Americans eat them (although they're good like that, too).
