How so? Stainless steel cookware does not react with acidic foods. (While cast iron definitely does.) I can't imagine bakeware being any different. I'm thinking out loud here....... lemon bars and the like can take on an off taste when baked in aluminum pans, but I've never noticed it with steel (or Pyrex, for that matter.)
I read it did react with them. Can’t remember where, though.
