Tonight is mushroom soup or chicken noodle soup.
I am thinking of making mushroom and chicken soup and then you can choice to pour or not pour it over noodles.

Re: What are you eating in October?
Last night was veggie fajitas for the 4,000th time with carne asada (not spicy and extra lime). I made Mexican rice too. J said it was almost as good as the box stuff my husband makes. . I made some salsa verde out of the green tomatoes from our garden and roasted poblano peppers- so good! Everyone approved, so I'll have to make it more often. R didn't eat the meat, but she never does.

Re: What are you eating in October?
I am loving Aldi. We don't have one where we live. I bought their Tiki Masala sauce in a jar. My son loved it. I poured it over boneless skinless chicken breast and put it in the oven. I served it with basmati rice, butternut squash, and carmelized onions. So good, especially since it's really cold now.
Last week when I had my mom over, I bought their beef stew sauce in a jar. Poured it over stew meat, potatoes, carrots, and onions. Put it in the oven. Everyone loved it. Unfortunately, they have these sauces for a short time and then they're gone. The ingredients are lovely. No junk. All the winter squash was $0.69/lb last night so I bought a lot. |

Re: What are you eating in October?
We had slow-cooker barbecue chicken on homemade rolls with roasted cauliflower on the side. (Not the most natural pairing, I know, but I had so much cauliflower to use up!)

Re: What are you eating in October?
Tried a new recipe. 8 thumbs down. Bleh. It had potential but was soooooo weirdly dry.
I'm enjoying the cookies the kids made after dinner much more than the main course. |

Re: What are you eating in October?
Tonight is orange chicken from Costco. I have an unexpected meeting and just didn't plan well. I really need to get on the planning wagon again. Sigh. So much brain power involved.

Re: What are you eating in October?
It was a "beefy tortellini skillet" that had the appealing features of an all-in-one skillet meal and 20 minute prep. Seasoning was decent but there was nothing that bound it together. There was tortellini. There was hamburger. There was melted cheese that only seemed to adhere to the tortellini which already had cheese in it.
I'm sure it would be tasty with mushroom soup, or a bit of cream cheese or something like that but as it was, it was a plate of sadness with broccoli and steamed dill-seasoned carrots. |

Having orange chicken from Costco in the freezer totally counts as a plan for busy days!

Re: What are you eating in October?
Fend for yourself: Leftovers or sandwiches. Luckily we have lots of leftovers.
I drive the girls carpool (5pm-6:30 practice) and then I walk during practice. Dh will drive the boys carpool TO practice only (7pm start).

Re: What are you eating in October?
Trying a new recipe - Guinness Beef Stew from Cook's Illustrated. Recipe is written for the oven, but I put it in the slow cooker. We'll see...

Re: What are you eating in October?
Did someone post chicken satay here? My brain is mush . I'm going to try that tonight. I'm almost out of zucchini! I'm going to make some breads. I might make and freeze a bunch of green salsa to use up tomatoes.
