Sausage with peppers and onions. Planned it with rice but ended up using two cans of potatoes instead.

Grabbed groceries tonight. In the meat section, Sam's Club had fresh chicken breasts stuffed with cream cheese and jalapenos, and wrapped in bacon, on sale for 50% off, so we grabbed that and made that for dinner tonight. It was really yummy! Had a salad with it as well.

Hasselback potaotoes with grilled asparagus or brussel sprouts (I have both). They ended up being desperate for one more nurse for the flu clinic at my prn job and asked if I would just come for the "rush" so I did and then didn't make dinner. But now we are out of leftovers so definitely the potatoes tonight.

I put a roast in the crockpot for tonight. I put veggies in with it as well, and then poured a bottle of Italian dressing over the top.

You inspired me! I've got Hasselback potatoes in the oven, too.

Salmon burgers for the adults, maybe the teens, plus an as-yet undetermined veggie to go with them.

English muffin pizzas. Easy and a favourite so win-win.

And I REALLY need to slow down my scrolling ... at first glance, I read "prn job" as though "prn" was missing a vowel. I was thinking, well that's a pretty casual detail to slip in there ...

It's how we afford our European vacations. But now that you mention it . . . I would love to go to European and never knew how we would afford it.
I read too fast often but you win!

Tonight is grilled cheese and tomato soup. Unless you are ds (who likes neither of those) then he is a grilled lunchmeat sandwich with some type of chicken based soup.
Our grilled cheese has any combo of onion, olives, pickles. Ds has any combo of lunchmeat.
Side of grilled asparagus (we did the brussel sprouts yesterday).

Default Re: What are you eating in October?

Hamburgers (dd was not here), grilled asparagus (dh made the grilled cheese and soup instead of me so we just had carrot sticks), and mashed potatoes.

Ill either do stir fry for dinner tonight or else a cold dinner (cheese, crackers, sandwiches, maybe leftovers, salads)
