Aw man! I keep forgetting to take pictures lately! This is so unlike me!
Tonight we had chicken teriyaki over rice for the kiddos and over zucchini noodles for the adults. So delicious! Made with fresh homemade pineapple. Also had gluten free pineapple cake with cream cheese frosting. I also assigned both weekend dinners to different kiddos. I love this "assigning meal prep to kiddos" thing!

I made this Jamaican Chicken Brown Stew in the crockpot and my (Haitian) husband and our (Haitian) friend are eating it with gusto right now-- they gave it the compliment that it tastes Haitian, which I've learned is the highest praise Haitians I know give food, ha! That usually seems to mean it's well seasoned without being too spicy or salty.

To night we had pinnies.
This week is going to be odd. Dh is out of town until Thursday evening. I will have extra kids all week because they are out of school, but there mom needs to work, and another friend is kidless all week because his wife is taking the kids on a trip. So we planed for a week of Bar B Q: pulled pork, chicken breast, and a beef brisket. With a random assortment of sides. It should be fun. And I can fill my freezer with leftovers. Yesterday I threw chopped up boneless skinless chicken thighs, tomatoes, black beans, corn, and probably something else that I can't remember right now, in to the crock pot.
Served over rice. Tonight I'm making some sort of sausage and rice skillet with the leftover rice.

Made a sauerkraut, apple and sausage skillet for dinner tonight.
For the children with less refined taste buds I also made a rice sausage skillet.

Which one? The sauerkraut?
I add coconut oil, then chopped onion and garlic to the skillet. Sautee a bit. Add chopped smoked sausage and sautee. Add diced apple. Drain and rinse sauerkraut (I make my own) and add. Optionally you can add a little bit of brown sugar here to increase the sweetness. Caraway seeds are also recommended but I never have on hand so I have never added them.

I made sun dried tom sausage with leftover rice for the kids. I made skillet chicken breast with garlic, peppers, zukes and toms for me and DH, served over salad with my favorite tahini dressing. Man, did I regret finishing off the olives and artichoke hearts yesterday
