Breakfast: Weekdays is usually some combination of toast, fruit, soy yoghurt, cereal (hot or cold). Sometimes a smoothie, though not as often as I'd like. On Saturdays we might have something a little more fancy, eg. pancakes or waffles. Lunch: Lunch is the one meal I struggle with most. We often end up with just something like baked beans on toast. Sometimes it will just be leftover dinner from the night before. Sometimes just sandwiches and fruit. Sometimes a salad of some sort, or a combination of grain/bean/green salads. Dinners: Some of our standbys are pasta, chilli, quesadillas, stir-fry, fried rice, some sort of bean or grain pattie, taco salad, pizza, breakfast-for-dinner. So, to put that all together, here's what a week in our home would look like (not my ideal week, but a typical week ): Sunday B: Cereal and fruit L: We usually eat lunch out on Sundays after church D: Breakfast for dinner - Oven fries, mushrooms, grilled tomato, toast. You could add scrambled tofu (not a big fan myself), or eggs if you eat them. Monday B: Toast and yoghurt L: Sandwiches, fruit D: Taco salad, my current favourite! (lettuce/mixed greens, tomato, corn, avocado, red onion, kidney beans, tortilla chips, cilantro, lime juice, olive oil. Mix it all up and enjoy!) Tuesday B: Oatmeal with dried fruit mixed in L: Baked beans or tinned spaghetti on toast D: Fried rice. We put any or all of the following vegies in this - carrots, peppers, spring onions, peas, corn (kernels or baby corn), mushrooms, pineapple, broccoli. Mix it all up with some brown rice and a bit of soy sauce. Sometimes I'll also add hoisin sauce, or perhaps sesame oil. Again, you could add diced tofu here, or eggs if you eat them. Wednesday B: Cereal and fruit L: Vegie sticks (whatever I have on hand) and tortilla chips with a couple of dips (usually hummus and guacamole) D: Pasta. Sometimes I make it from scratch, sometimes I just buy a bottle of sauce and add fresh vegies to it. Depends how much time I have! I'm happy with just pasta, but we'll usually have garlic or herb bread too. DH seems to think you can't eat pasta without it! Thursday B: Smoothie (fruit & soy milk usually) L: Leftover pasta D: Quesadillas. We make these with refried beans, onions, tomatoes, avocados, mushrooms etc. I have mine without cheese, though DH loves it on his. This is a really quick and easy dinner. If I'm prepared ahead, sometimes I'll make Mexican rice to go with it. Friday B: Toast and fruit L: Sandwiches D: Burgers (lentil patties & assorted salad vegies) & oven fries Saturday B: Waffles with strawberries and maple syrup L: Falafel & salad on pitta bread D: Pizza. I usually make the base, and then add whatever toppings we have on hand. Usually it's just the same old stuff, but sometimes we'll choose a theme, for example Mexican pizza (kidney beans, avocado, peppers, tomato, taco sauce etc), just to change it up a little. As far as snacks, I like to bake So we usually have muffins, quickbreads and cookies on hand. I usually freeze these though, so we don't overdose on any one thing at a a time. We also snack on fruit (fresh and dried), nuts, yoghurt, tortilla chips, vege sticks and various dips etc. I'll often make up a big batch of hummus at the beginning of the week for snacking on.
