I use pioneer woman's . I usually add more sesame oil and skip the green onions.

Mmm, I love sesame noodles.
Last night we had rice pasta with sauteed onions, garlic, zucchini and fresh cherry tomatoes from the garden. I had pesto on mine, DH and DD had parmesan cheese on theirs. We also had kale salad: raw kale, olive oil, sea salt, lemon juice, drizzle of honey, chopped apples, cranberries, almonds and candied ginger. Tonight we are non-veg but tomorrow we are having crock pot rice and beans. Breakfast this morning was fried eggs and oatmeal. Tomorrow will probably be cinnamon zucchini cake that just came out of the oven. Usually DD and I eat leftovers or just snack on fruit/veggies for lunch. Today I'm actually cooking for us, I have an acorn squash roasting in the oven and when it's almost done I'll flip it over, fill the cavities with chopped apples and walnuts and put a little coconut oil and sucanat on top.

Leftover stir-fry for dinner. Lots of fruit all day for snacking/lunch, since we were given the extras after an event Monday night.

Mexican pasta salad (new recipe, it was YUMMY) for lunch perogies (which I apparently don't know how to spell) for supper

I made lentil soup yesterday that was totally edible. some of my kids even got seconds. brown 1 chopped onion, 3 grated carrots, 4 cloves minced garlic for a few minutes. pour in 1 lb lentils, 1 28 oz can of diced tomatoes, 2 cans (the 28oz one) of water, 1 heaping teaspoon italian seasoning, and 2 veggie bouillon cubes. bring it to a boil, cover and simmer for 30 minutes.

I will try roasting my squash upside down. I have always stuffed it and baked because my mom does.
I like to put bakon bits on my avocado toast. Frontier makes a really good bit if you can find it. Pretty easy to get online.

Last night we had pancakes.
Tonight we are having zuchini potato parmesean casserole. I didn't use a recipe so I hope it's good. Lunch was pine nut hummus with carrots and crackers. |

We were going to try a new recipe for a cauliflower "alfredo" sauce, but I'm fighting a headache and didn't want to have to figure it out, so we just did pasta and red sauce. Lexie could make that without my help
