Your favorite veggie recipes (low carb)
Hit me with your successful veggie recipes!
No grains added (so no breading, corn, etc.) No legumes. Except for green beans. No milk/yogurt, but cheese is okay. Dh is trying to eat low carb and his imagination is limited. He's going to get bored with basic salads. So far I have: Roasted cauliflower with parmesan, butter, and garlic Roasted broccoli with olive oil Roasted cabbage slices, not sure on recipe Zucchini slices with parmesan Cole slaw More things not done in an oven would be appreciated! Roasted green beans (in the oven, sorry) - toss green beans with olive oil, soy sauce, salt, pepper, granulated onion, granulated garlic and roast until almost crispy, tossing halfway through
Quick zucchini saute Grilled asparagus tossed with lemon, olive oil, salt and pepper. Grilled or sauteed multi-colored bell peppers Kale Caesar salad is a fave of mine right now - kale, Parmesan, bacon bits, toasted pine nuts, and your favorite Caesar dressing, let set a few minutes so kale will tenderize a little bit Zucchini noodles Mexican radish slaw - such a refreshing flavor Grilled herb zucchini This Citrus Orange Lettuce Salad is really yummy.

We've been roasting zucchini with minced garlic and sliced radishes. Surprisingly good!

These brussels sprouts are amazing. I have made them with fresh, or frozen brussels sprouts. It turns out good either way

put down some sauce in bottom of pan, thinly slice eggplant, top with sauce, put down some thin sliced mushrooms, bake 20 minutes.
immediate hit here. you could add cheese I am sure. |
