Default What are your childrens favorite vegan recipes?

I have been trying to wean my children of eggs and dairy for the past few months and sometimes I feel like we dont have very many "kid friendly"recipes.Could all of you moms out there help with your kids favorite recipes?Thanks,Gina

Well, I've probably mentioned this before but my kids *love* noodles with a sauce made of tofu.

I crumble a block of tofu into the blender and add a cup of water. I blend it on high until it's smooth. It seems the more you blend it, the "fluffier" it becomes. I don't do it for a certain amount if time, but if I'm not in a rush, I blend it for longer than if I'm in a rush.

These ingredients can be added in the blender or in the pan (our blender is not the best, so sometimes it's easier for me to add these things in the pan, but I would prefer mixing it all in the blender). I add some garlic (fresh or garlic powder), vegetarian chicken flavoring, Liquid Aminos, and Earth Balance (a vegan "butter" spread). I don't measure out the ingredients, but I just add them to taste.

Anyway, the kids (and dh) love noddles with that sauce on them very much. It's one of their most favorite dishes.

Another thing they love is what we call "potato pie."

The bottom layer is TVP rehydrated in water with vegetarian chicken or beef broth flavoring added. I also add a little oil or Earth Balance. I enjoy onions in it, too, my one of my children hate cooked onions, so I quit doing that. (

Anyway, the next layer is corn.

And the top layer is mashed potatos (adding a couple sweet potatos can be nice, too)!

Our kids also like tacos (we buy a vegan cheese to add on it).

And they like pizza. Since one of my kids only will eat the veggies raw, I make the crust, put the sauce on and put on some pineapple then cook it. After it's cooked, I put on shredded carrots and chopped up green (or other color) peppers. They really like it (except for my toddler... he doesn't like bread or pizza crust or anything like that).

I also make a really, really simple enchiada recipe.

I take a can of tomato sauce and a jar of spagetti sauce and add mexican seasonings.

In a 9x12 inch dish, I put sauce on the bottom layer, lay six corn tortillas on the next layer, them I add crubled up tofu (soft tofu is my favorite to use for this dish) on the next layer. I sprinkle vegetarian chicken flavoring over the crumbled tofu. Sometimes I sprinkle garlic powder over it, too. I add a little sauce to that layer, too, just so it's a little more wet. Then I add the other six tortillas on top of that and spread the rest of the sauce over the top of it all. Then cook until nice and hot and bubbly. I sometimes add vegan "cheese" on top if I have it, but they like it without it fine. Vegan sour cream can be nice, too, if available, for those who like that.

Anyway, those are some of our "mainstay" dishes. We also love baked potatos. That is thanks to you and the meal we had at your house. Oh, and rice... we eat quite a lot of rice (usually with tofu), and also we love pasta with spagetti sauce.

And two my kids love chickpea nuts -- you take canned chickpeas and drain them, mix them with lime or lemon juice and some oil. Add just a sprinkle of cyanne (sp?) pepper and a little ginger and mix. Spread them out on a cookie sheet in one layer, and cook until a little browned and a little crispy (about 45 mintues, I think), making sure to stir them every so often.

Anyway, I hope something here helps. I hope others add their ideas, too, because I sure need some new ideas, too.

Those are great ideas! I'll hang out with you and wait for any more. I often find myself cooking vegan even though I don't set out to, since we have a dairy allergy in the family and I cook vegetarian a lot anyway.

Jeri,What kind of tofu do you use for the noodles and what kind for the enchiladas?Thats usually where I go wrong is I sometimes use the wrong tofu.

Mine really like falafel. I use the fantastic food mix. I fry little balls of it in extra virgin olive oil. I serve it with greek flatbread, hummus, sliced tomatoes, sliced cucumbers, and olives.

Vegan hot dogs wrapped up in crescent rolls. (Yes, they are Vegan.) Homemade fries.

Baked sweet potatoes drizzled with maple syrup.

Breakfast for dinner is really yummy.

Vegan lasagna is really easy. I use crumbled tofu and chunks of tofutti cream cheese in place of ricotta.

We drink a lot of smoothies.

Those premade meatballs can be used in lots of dishes. You can make meatball sandwiches, fry them in a pan with a little oil and top with gravy, slice them in half and put them in lasagna or top a pizza with them.
