I used these 2 recipes from vegweb and it turned out really good! My dairy-allergic ds was thrilled!

Oh, Amanda! Thanks for posting this!! Dd's birthday is coming up soon, and I have been hoping to find a good vegan recipe. I know Kym had one posted on the old board (I think it was in the sample of our newsletter?

) Anyway, this sounds awesome. I am going to give it a try!

It reminds me of the chocolate lava cake at California Pizza Kitchen, except the "lava" is on top in this case

Its not a super sweet cake, but its really good. Plus, since there's no eggs in the batter, I could eat it raw guilt free

Um, I don't know? I know that I've heard that white sugar is bleached through a process that uses animal bones?

I use sucanat in place of regular sugar.

Yep, you can buy sugar that hasn't had animal bones used in the bleaching process. We use sucanat too.

It was a HIT!!!! They thought it was chewy like brownie but they said they really liked it.

How can you tell vegan sugar? What ingredients do you look for. I had to use the normal sugars.

Oh MY we made this again to try to make dd a Mickey cake for her big birthday party with her friends and ended up running to the store for batter mix since we had no time to mess anymore. It totally did not come out CLOSE to the other one I made same flour and all we ended up throwing out the flour.

We didn't have the baking soda so might have been why it was not right. Crazy MIL didn't have any.
